Zucchini Pizza Recipe – Healthy and Seriously Delicious!

This zucchini pizza has become one of my all-time favorites. It’s light, filling, packed with veggies, and totally fits into a healthy eating lifestyle. The base is made from grated zucchini, and with just a few simple ingredients, you’ll have a delicious pizza crust in no time.

Easy, Healthy Zucchini Pizza Crust (for 2 people)

Ingredients:

  • 1 medium zucchini

  • 2 tablespoons cottage cheese (or plain ricotta)

  • 2 tablespoons flour (you can use oat or almond flour for a gluten-free version)

  • A small handful of grated cheese (use a large-hole grater)

  • Salt and pepper to taste

How to make your zucchini pizza crust:

  • Peel and grate the zucchini, then sprinkle with salt and let it sit for 15 minutes to release excess moisture.
  • Use a clean kitchen towel to squeeze out as much liquid as possible—this is key to getting a crisp crust!
  • In a bowl, mix the zucchini with cottage cheese, flour, grated cheese, salt, and pepper.
  • Line a baking sheet with parchment paper, spread the mixture into a flat round shape.
  • Bake at 180°C (350°F) on top and bottom heat until golden brown—about 20–25 minutes.
  • Remove from the oven, spread with homemade tomato sauce (get the recipe HERE), sprinkle generously with cheese, and return to the oven for another 10 minutes until the cheese is melted and bubbly.
