No fancy ingredients, no complicated steps – just a simple mix-and-bake dessert that’s ready in minutes. Despite how easy it is to make, the taste is incredibly creamy, soft, and satisfying. It’s always a hit at our house, and the best part? It only takes 10 minutes to prepare – then the oven does the rest!
Serve it warm or cold, and don’t skip the fruit topping – it adds such a fresh, juicy contrast to the creamy base.
Ingredients:
500 g ricotta cheese
4 eggs
4 tablespoons honey (or more to taste)
6 tablespoons semolina
1 teaspoon vanilla extract or grated lemon zest
150–200 g fresh or frozen berries (e.g. raspberries, blueberries, sour cherries)

How to make your Ricotta Cake:
Preheat your oven to 180°C / 350°F (top-bottom heat).
In a large bowl, mix together the ricotta, eggs, honey, semolina, and vanilla or lemon zest until smooth.
Lightly butter a 20x20 cm (8x8 inch) ceramic or glass baking dish.
Pour the batter into the dish and smooth the top.
Generously scatter the berries over the top.
Bake for 35–40 minutes, or until the top is lightly golden and the center is set.
Let it cool slightly before slicing. It tastes amazing both warm and chilled!
Extra tip? Yes, please!
If you like a tangy flavor, go for raspberries or sour cherries. For a sweeter version, try banana slices or peaches on top!
